The production begins
with the fresh cut sugar cane and fresh naturally filtered rain water. Colinas do Sul Rum is fermented using a specially designed yeast. Due to the climate,
Colinas do Sul: Silver is rested a
minimum of 3 months in Brazilian Jequitibá barrels. The color has been referred to by the BTI as
pale platinum straw cast in color, Colinas do Sul: Silver comes through with
rich aromas of spicy banana cake, caramelized nuts, suede and anise cookie
follow through on a soft, silky entry to a rich off-dry medium-to-full body
with excellent depth and balance. Finishes with a long plantain pudding, cane,
powdered sugar and anise accented fade. Colinas do Sul: Silver is delicious, vibrant
and very mixable. Colinas do Sul: Gold is a blend of rums aged a minimum of
three years in Brazilian Jequitibá barrels. Our
current batch of Colinas do Sul: Gold is still aging although past batches have
been noted as a full-bodied, amber rum, with an elegant, fruity nose and a
taste nuanced with hints of coffee, roasted nuts, and sweet pralines.

bottle we put back into our product. The classic
Colinas do Sul: Silver launches this
summer 2010, Colinas do Sul Cachaça Rum will be available in 750ml and 50ml
sizes. Colinas do Sul Rums are 40% alcohol
by volume. In addition, dates will be
announced for major market launch parties and celebrations throughout the
country. Colinas do Sul: Gold will be
available in limited quantities in 2011.
